Preparation :
This is a very simple but delicious cannede separate the leaves of cabbage and boil them a few at a time in a Dutch oven. Drain them. To make filling, combine, rice, pepper paste and all spices in a medium mixing bowl. Add chopped onion, parsley, diced tomatoes, and minced garlic. Drizzle over olive oil on top and stir them well.
Cut the cabbage leaves into two or three according to their sizes. Clean the stems and thick veins. They are supposed to be bigger than your palm. Place one of them on a flat surface. Put 1 tsp filling on one side and fold the edges inside then roll it tightly till the end.
As you finish all cabbage leaves, pile them in a pot tightly. Pour 1 or 1 and ½ cups hot water gently and place some lemon slices on stuffed leaves. Turn to heat on medium (on the stove not in the oven) and cook until the leaves nice and soft. it generally takes 30-35 minutes. |
